Ours Blanc, a representative bakery in Hyochang-dong that has celebrated its 13th anniversary since its opening in 2011. This book carefully selects the popular menus of Ours Blanc and contains the actual on-site recipes.
Part 1 introduces the flour blending method that are the basis of bread, pre-ferment, and other ingredients. Part 2 introduces four basic breads (baguettes, croissants, campagne, and focaccia) that can be eaten deliciously and often without getting tired of them. Part 3 introduces application recipes that create a variety of flavors and textures by differentiating molding, fillings, or toppings with the four basic bread doughs introduced above. Part 4 contains recipes that can be a meal. Popular menus that are sold out early in the bakery, such as sandwich, tartine, quiche, soup, and salad, were carefully selected. The bonus part contains signature recipes such as galette, mont blanc, and fruit pastries.
