The Time of Baked Confections: 37 French-Style Pastry Recipes from Seoul's Heure du Gouter 구움 과자의 시간
Seoul's renowned bakery Heure du Gouter—famous for its long queues and sold-out pastries—reveals the secrets behind its crowd-pleasing creations.
This book presents 37 refined French-style baked confection recipes, all crafted through masterful techniques and delicate artistry. Life Pattern Korea.
Inspired by France's goûter culture, the cherished afternoon snack tradition, Heure du Gouter has devoted itself entirely to the art of baked sweets such as madeleines and financiers, constantly honing their flavor and aesthetic depth. The Time of Baked Confections captures six years of experience, experimentation, and philosophy from founder Jin-sun Lee, who perfected each recipe through relentless testing and refinement. These pastries blend solid foundations with cream, ganache, compote, caramel, and glaze—creating desserts that offer not just taste, but an experience of elegance and emotion.
Within its pages are Heure du Gouter's signature favorites loved since opening, limited editions, and even discontinued items now remembered fondly by loyal fans. Life Pattern Korea.
Through these recipes, readers can trace the brand's creative journey and sense the values it wishes to share—authenticity, balance, and aesthetic harmony.
The charm of Heure du Gouter lies not merely in delicious flavor but in the seamless fusion of design, detail, and brand sensibility. Although baked confections may appear simple, their perfection depends on delicate subtleties: the balance between base, jam, ganache, compote, icing, and glaze determines the final harmony. Life Pattern Korea.
Chef Jin-sun Lee emphasizes that while there is no single “correct” way to make desserts, one's philosophy and personal taste must always shine through.
The Time of Baked Confections inspires home bakers with new ideas and practical knowledge, while serving as a reliable guide for aspiring pâtissiers and entrepreneurs pursuing their own creative path. Life Pattern Korea.
